MAKES 2 PIZZAS
Stir flour, yeast and salt together in a big bowl. Make a well in the middle and add 200ml of warm water and 1 tbsp of olive oil.
Tip out onto a lightly floured surface and bring together with your hands. Knead the dough for at least five minutes. Place onto an oiled plate or into an oiled bowl until ready to be rolled out.
Now to make your sauce, you can make whatever sauce you like, but I use this as a base on any pizza as it doesn't over power your toppings and is super easy and cheap to make. So, chop your garlic finely and put into a saucepan along with a little bit of olive oil on a low-medium heat, we don't want to brown the garlic we just want to soften it. Next add 150ml of passata and a handful of basil that has been chopped finely.
Turn the heat off and leave your sauce in the pan while you turn back to your dough.
Pre-heat your oven to 220°C.
Take your dough and split it in half, one at a time roll it out onto a floured surface using a rolling pin that has been lightly floured. Don't worry it's most likely that your pizza won't roll out into a perfect circle, this will give it more character! Once both pizza bases are rolled out place them onto the back of a baking tray (you can cover them with baking paper or just put the pizzas straight onto the back of the tray just make sure you grease the back of them thoroughly)
The final step is decorating! My favourites are smoked ham, chorizo, goats cheese and fresh basil leaves.
Once your happy with the toppings put both trays in the oven and cook for 15-20 minutes until the dough has cooked.
