Hello guys, so welcome to a brand new feature of my blog, I'm an avid baker and cook and I love food, I absolutely love it! So I decided that each week I'd come at you with tried & tested recipes that I love, first being cupcakes! These lemon cupcakes are light and sweet and are a favourite with my family and friends. The recipe will make between 12 and 24 cakes (it just depends how big or small you want each cupcake to be), all the ingredients are cheap and easy to get hold of, so there's no excuse not to try them!

FOR THE CAKES
Pre heat the oven to 180c and line a twelve hole muffin tin with your chosen cake cases.
Using an electric mix to get the smoothest possible consistency, mix together 250g of caster sugar and 250g of the butter together. Once smooth mix in the 250g of flour and 3 eggs. Then mix in the zest of two lemons and the juice of one.
FOR THE ICING
Spoon the cake mix into your cake cases and bake in the center of the oven for 20-25 minutes, or until golden brown. For the icing, mix 200g of icing sugar and the juice of one lemon until the consistency is smooth, if it's too runny then add more icing sugar and if you feel it's too thick add a splash of water.
Finally decorate with whatever topping you like! I like to use little lemon jelly sweets (you can find them in the baking aisle of Morrisons)
