These yummy cupcakes are very simple and extremely quick to make, great for sharing...greater for solitary indulgence...what else is there to do in this weather though?!
For the Cupcakes
100g plain flour, 20g cocoa powder, 140g caster sugar, 1.5tsp baking powder, pinch of salt, 40g unsalted butter at room temperature, 120ml whole milk, 1 large egg, 1/4tsp vanilla extract.
For the Frosting
110g softened butter, 440g icing sugar, 1 pinch of salt, 2tbsp orange juice, 2 tbsp golden syrup, 2 tsp vanilla extract, 2 drops of orange food colouring (optional)
Preheat oven to 170.c (gas mark 3). Beat the flour cocoa, sugar, baking powder, salt and butter until you have a sandy consistency. Whisk egg, milk & vanilla in a jug then pour half into the mixture, beat to combine and then add the other half mixing for a couple of minutes to ensure no lumps. Spoon into 12 cake cases and cook for 25 minutes.
For the icing, beat the softened butter, icing sugar and salt until smooth in a large bowl. Add the orange juice, golden syrup and vanilla. Beat until smooth and creamy then if desired tint with the orange food colouring.
